Pearls of Balsamic Vinegar

The pearls are obtained by spherification (using a gelling agent - sodium alginate -) of our dark and white balsamic condiments which are then turned into small spheres with liquid heart, similar to caviar but 100% vegetal. The "caviar" appearance and the pleasant texture, along with the delicate sweet-and-sour taste,  make them perfect to decorate any kind of dish, from appetizers to desserts. They are perfect to dress warm dishes, since they resist up to 220°C. Ideal for finger food, sushi, salads, pizza, desserts, cheesecakes, ice-creams, etc… and even cocktails.
