FRESH TRUFFLES

  • White truffle (Tuber magnatum Pico): White Truffle has the ability to develop in a completely spontaneous way in the depth of calcareous soils located in aerated places with  soft soggy rain-soaked ground. The white willow, the linden, the poplar, the beech, the oak are some of the species of trees with which it lives in symbiosis to draw its nourishment. The harvest period in Tuscany opens on September 10th and closes December 31st.

  • Black Truffle (Tuber melanosporum Vitt.): The precious Black Truffle is so called for its dark color that characterizes both the peel and the internal gleba, which shows nuances from very dark red to brown.
    The period of collection and sale of the precious Black Truffle is between winter and spring, from November 15th to March 15th, as far as the Tuscany region is concerned.

  • Bianchetto or Spring Truffle (Tuber borchii Vitt.): It is a variety of Truffle, less valuable and so less expensive than the classic White Truffle. It is found on the sea level, typically in symbiosis with the domestic pine and the maritime pine.
    The collection calendar in Tuscany opens on January 10th and ends on April 30th.

  • Summer Truffle (Tuber aestivum Vitt.): Summer Truffle is also defined “Scorzone” for its round and particularly thick coating  that allows you to distinguish it from the Black Truffle.
    Summer Truffle is considered less valuable and can be found at much lower market prices.
    In Tuscany, the harvest is between the 1st of June and the 15th of November.
