String cheese lines

Almac string cheese technology is designed for making string cheese of different diameters and lengths. 

The line can be fed either by a continuous stretching machine or by an Almac steam stretcher FV type. Pasta filata dough is introduced into the in-feed hopper and, by means of counter-rotating augers, is transported to the molding string cheese head.

The continuous string cheese-rope, coming out from the molding head and going through a special cooling system, reaches the cutting station in order to be cut on size.

By this technology, Almac guarantees the typical “special texture” required by string cheese lovers.
